Scalloped Apples

Ingredients

  • 2 cups fresh bread crumbs from a stale loaf
  • 1/4 cup (4 tbsp) butter, melted, plus more for the dish
  • 4 medium apples (about 1 quart sliced), peeled, cored and sliced thin
  • 1/4 cup sugar
  • 1/4 tsp grated nutmeg
  • Zest and juice of 1/2 lemon
  • Cream or sweetened whipped cream, to serve

Directions

  1. Heat the oven to 375°F (190°C) and butter a 1 1/2 quart baking dish.
  2. Toss the bread crumbs with the melted butter using a fork.
  3. Mix the sugar, nutmeg, lemon zest and lemon juice.
  4. Spread a third of the crumbs in the dish, then half the apples, then half of the sugar mixture. Repeat, and finish with the last third of the crumbs.
  5. Cover with foil and bake 25 minutes, then uncover and bake 15 to 20 minutes more, until the apples are tender and the top is browned. The foil keeps the crumbs from browning too early.
  6. Serve warm with cream.
