Savory Pancakes and BBQ Chicken

Ingredients

For the Herb Pancakes:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • Chopped fresh herbs (such as parsley, thyme, rosemary)
  • Large egg
  • Milk or Buttermilk

For the BBQ Chicken:

  • Boneless skinless chicken breasts
  • Olive oil or butter for frying
  • BBQ Sauce

Directions

  1. Start off by preparing herb pancakes. In a bowl mix together all-purpose flour, baking powder, salt along with your favorite chopped herbs until well combined.
  2. Add in egg and milk/buttermilk and gently stir until there are no dry patches of flour left; Be careful not to overmix.
  3. Preheat your griddle or skillet over medium heat lightly brushed with olive oil or butter.
  4. Scoop batter onto preheated griddle/skillet forming medium-sized pancakes. Cook until bubbles appear on the surface, then flip and cook until golden brown. Remove from heat and set aside.
  5. Next, preheat your skillet over medium-high heat with some olive oil or butter.
  6. Season chicken breasts with salt and pepper on both sides and place them on the skillet. Cook each side for about 6-7 minutes or until they’re no longer pink in the middle.
  7. Reduce the heat to low-medium and generously coat the chicken breasts with your favorite BBQ sauce using a brush; let it simmer for another few minutes to allow the flavors to meld together.
  8. To serve, stack your savory herb pancakes high on a plate, top it off with BBQ Chicken Breast sliced into thin strips.
