Slow Cooker Pulled Pork
Ingredients
- 1 pork shoulder (pork butt), 4 1/2 to 5 lb, bone-in or boneless
- 2 medium yellow onions, thinly sliced
- 4 garlic cloves, thinly sliced
- 1 cup chicken stock
- 1 tbsp dark brown sugar
- 1 tbsp chili powder
- 1 tbsp kosher salt, plus more to taste
- 1/2 tsp ground cumin
- 1/4 tsp ground cinnamon
- 2 cups barbecue sauce (optional)
Directions
- Spread the onions and garlic over the bottom of the slow cooker and pour in the stock.
- Mix the brown sugar, chili powder, salt, cumin and cinnamon.
- Pat the pork dry, rub the spice mix all over it, and set it on the onions.
- Cover and cook 8 to 10 hours on low or 6 to 8 on high, until it falls apart with a fork.
- Move the pork to a board. Strain the cooking liquid into a bowl and put the onions back in the cooker.
- Pull out any bone and big pieces of fat, shred the meat with two forks, and return it to the cooker.
- Stir in the barbecue sauce, or skim the fat off the strained liquid and add it a little at a time until the meat is just moist.
- Taste and add salt if needed.
