Ham and Pea Soup ("Green Gloop Soup")

A large saucepan or Dutch oven, plus an immersion blender or regular blender.

Ingredients

  • 2 tbsp unsalted butter
  • 1 leek, rinsed and finely chopped
  • 2 stalks celery, finely chopped
  • 3 garlic cloves, minced
  • 2 lb (900 g) frozen peas
  • 1 quart (0.95 L) chicken stock
  • 1 cup (236 ml) heavy cream
  • 2 tsp coarse salt
  • 1/2 tsp freshly ground black pepper
  • 1 ham steak (8 to 12 oz), diced

Directions

  1. Melt the butter over medium-high. Cook the leek and celery 7 to 9 minutes, stirring now and then, until the leek is translucent. Add the garlic and stir about 30 seconds, until fragrant.
  2. Add the peas, stock, cream, salt, and pepper. Bring to a boil, then simmer 5 to 7 minutes, until the peas are tender. Take off the heat.
  3. Purée until smooth with an immersion blender, or in batches in a regular blender and pour back into the pot.
  4. Bring back to a simmer over medium, stir in the ham, and cook 5 to 7 minutes to heat it through. Serve right away.
