Blackened Shrimp Tacos

Ingredients

Shrimp:

  • 1 lb (450 g) medium shrimp, peeled and deveined
  • 1 tbsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp coarse salt
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/4 tsp cayenne
  • 3 tbsp neutral oil, divided (1 tbsp, then 2 tbsp)

Slaw:

  • 1/2 head red cabbage, shredded
  • 1/2 head green cabbage, shredded
  • 1/2 cup (118 ml) Mexican crema
  • Juice of 2 limes
  • 1 tsp coarse salt
  • 1/2 tsp chipotle powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp cayenne

To serve:

  • Warm corn tortillas
  • 2 avocados, cubed

Directions

  1. Heat a charcoal grill for two-zone cooking. Clean and oil the grate and preheat about 5 minutes. A grill pan works too.
  2. Toss the shrimp with the spices and 1 tbsp oil. Refrigerate.
  3. Toss both cabbages with the crema, lime juice, salt, chipotle, paprika, and cayenne. Chill.
  4. Heat a perforated grill pan, add the remaining 2 tbsp oil, and cook the shrimp in one layer with the lid closed, about 2 minutes. Flip and cook about 1 minute more, until opaque. Work in batches.
  5. Fill the tortillas with slaw, shrimp, and avocado.
